Here we show you how to make Elderberry Wine. A deep, dark full bodied, dry red that matches in style with wines from the Burgundy area of France. If you are in the UK and need any ingredients, then please support our website and buy your brewing ingredients and brewing equipment from us at http://www.brewbitz.com It's easy to make Elderberry wine and you'll find elderberries growing wild in the hedgerows in the countryside. The are abundant from mid August and will be around for a couple of months. Pick them when they are deep purple, almost black, but wear gloves as they can burst and give you purple hands for a few days. Do not use the stalks or any other part of the Elder tree as this is poisonous. Remove the elderberries from their stalks and give them a quick rinse in cold water to get rid of any dirt or spiders. You will need a big preserving pan as we are going to boil the elderberries, use a few pans if you don't have a big one. It is best left for 12 months before drinking for all the flavours to mature. Ingredients: 3lb Redcurrants 3lb sugar 1 gallon (8 pints) boiling water 1 tsp All purpose red wine yeast 1 tsp Yeast Nutrient 1 tsp Pectic Enzyme Muslin Campden Tabs Method: 1 - Pop your redcurrants into the fermenting bucket 2 - Pour over the gallon (8 pints) of boiling water 3 - Give them a good stir and put the lid on the bucket 4 - Put this somewhere cool for 7 days. 5 - After 7 days have passed open the bucket. Dont worry if there is a little mold. 6 - Strain the liquid into a clean sterlisied bucket. 7 - Discard the redcurrants. 8 - Add the 3lb of sugar to the redcurrant water and stir until dissolved. 9 - Take a sample and a reading with your hydrometer and keep this safe. 10 - Add the pectolase & yeast nutrient and stir. 11 - Then sprinkle on the yeast. 12 - Loosely put the lid on and put it into a warm cupboard (20°C) 13 - Stir every day for 3 days 14 - Leave for 4 more days 15 - Siphon into a clean sterilised Demi-John & pop in the airlock. 16 - Put this back into your warm place (20°C) until no more bubbles pass through the airlock. 17 - Once fermentation is complete, check with a hydrometer it should be below 1.000. Use this new reading with the original reading to work out the ABV of your wine. 18 - Rack off into a clean Demi-John add 1 crushed Campden Tablet and leave to clear. 19 - Once clear, bottle and keep for 6 months to condition. Remember to drink responsibly.

Watch as Davin shows you how to make an amazing Sloe Wine from scratch. This wine is simply stunning so go pick some sloes and give it a try, you will be pleasantly surprised! This is an amazing deep red wine that so full of amazing flavours with a nice little kick from the acidity. The moulding process gives it a really spicy note. Yes this wine does involve a mould. But like lots of other foods a mould can add a huge amount of flavour. Take a Blue Cheese, the mould helps to add note only flavour but texture too and even changes the way the cheese feels in the mouth. The mould in this wine adds flavour and without it, yes it will be a nice wine, but not an amazing wine. If you are at all concerned about growing a mould, then you can skip this part of the recipe. Instead: - Pour on the boiling water. Put on the lid and leave somewhere cool for 7 days to allow the fruits to infuse their colours and flavour. After the 7 days, strain the sloes off the liquid and continue the fermentation process at straining steps. It's pretty easy to make such a great wine at home, follow Davin's steps and you'll be making a wine to be proud of. When ferment reaches S.G. 1.030 (about 5-8 days), strain the juice from bag. Syphon wine off sediment into glass secondary carboy and attach airlock. 6. When ferment is complete (S.G. has dropped to 1.000--about 4 weeks) syphon off sediment into clean carboy and reattach airlock. 7. To aid clearing syphon again in 2-4 months and again if necessary before bottling. At bottling add 2 1/2 teaspoons of stabilizer then stir in 2 1/2 pints of Red Grape Concentrate or substitute with 2 1/2 pounds of sugar. Ideally you will need a couple of demijohns and syphon tubing. I got the wine box from http://www.brew2bottle.co.uk Ingredients: 4 to 5 litres of cheap, clear apple juice; 30g oak chips (optional); 530g sugar; a sachet of wine yeast; half a campden tablet. I used 530g sugar because my apple juice had an original gravity of 1.046 and I wanted to raise the gravity to about 1.090 for a resulting wine of around 12% abv. If I were bottling the wine for longer storage (this one's for immediate consumption) I would have added potassium sorbate as well as the campden; campden kills yeast, potassium sorbate prevents fermentation from organisms that may contaminate the wine (wild yeasts etc)

updates Feb 2021: - it's not pure yeast, it's yeast + nutrients. - the 26% comes from the label on the package. It is very special yeast, but yes it does not actually get that high, more likely at most 18%. Need to measure this directly. - you can use a balloon instead of airlock. - you won't get diabetes. The sugar gets converted to alcohol. Add less sugar if you're afraid. If you use bread yeast then yeah add way less because that yeast is not meant for this but will work. - I should/maybe will make a follow up video ;) - songs are listed below. I love this stuff. I've been doing this since I learned how yeasts anearobically ferment. Every kind of alcohol gives a different drunk, homebrew is unique. You can also use fining agents (e.g. gelatine) to get rid of the debris at the end. It may take a couple of rounds of cooling/decanting to get rid of it. please drink responsibly and follow your local and federal laws. I cannot be held responsible for any misuse of this video for excessive intoxication or illegal activity. Proceed at your own risk. I also highly recommend not to alter this process so as to attempt an increase in alcohol percent (e.g. distilling) as it may yield poisonous levels of methanol. How To Make Sparkling Mango Wine Without Adding Any Yeast
Hello Friends, Today I am showing you how to make sparkling mango wine without adding any yeast at home . I know some of you are not able to buy brewers yeast to make wine now due to lockdown. I have used mango you can use other fruit like lychee, pineapple, apple, passion fruit . The natural yeast and enzymes present in these fruits will activate the fermentation which we call wild fermentation . Normally we make wine from sugar but I have used honey which takes longer to ferment than sugar but taste wise it's better than wine from sugar . The wine made from honey is called mead . If you add fruits it will be mead melomel . The more sugar or honey you add the higher the percentage of alcohol will be there . But keep it to maximum 25% . Last 7 days I kept in refrigerator to do slow fermentation since Singapore is very hot now and it's not ideal for fermentation . You can keep longer in refrigerator and after opening you can just close the cap again and leave it there until few weeks to month . This is a very easy way to get alcohol in 10-14 days . How to make WILD FERMENTED Homemade Grape Wine
In this video I will share with you my first experience making WINE! I used fresh concord grapes, and did a wild fermentation. Here is my recipe: Ingredients: 6 lbs of concord grapes 3 cups of organic cane sugar 1 gallon of filtered water (can use up to 1.5 gallons of water) Instructions: 1. De-stem & sort the grapes removing unripe/mashed ones. Crush them to release the juice, put the grapes & juice in a large glass jar. Cover jar with coffee filter & rubber band. 2. For the first 2 days stir wine every 4 hours (when possible). This agitates the yeasts, mixing them into the wine & preventing mold from forming on the surface. 3. For the next several days stir 2+ times a day. 4. On day 7 strain off grapes. Put wine in a glass carboy & add an airlock. 5. Allow wine to ferment for 1-9 months. 6. To calculate alcohol, two key measurements must be taken. The Original Specific Gravity (OG), and the Final Gravity (FG). To take these readings, place the hydrometer in a vial of the liquid to be tested and read to the bottom of the meniscus. Correct for temperature if necessary and be sure to strain juice if it contains many solids. OG is taken before fermentation and FG is taken after fermentation has completed. How to Brew Beer at Home: Start to Finish. Tips & Tricks. For the Beginner or Expert
All the steps for brewing a superb batch of beer and explained & demonstrated. Tips & time saving "tricks" are provided. These "tips & tricks" makes the video a valuable resource for both beginning and experienced home brewers. I have made over 100 batches of home brew. I've learned what equipment and steps are necessary, and (importantly) what are NOT necessary. I also debunk some myths and unneeded steps that make the brew day more difficult and do nothing for the quality of the beer. Equipment Needed: 5 gallon Kettle with lid (Stainless or Aluminum) 6.5 gallon carboy or a plastic fermentation bucket Airlock & Bung Extract Home Beer kit with yeast. (Some are recommended below, but any will do) "Jet Bottle Washer" Carboy brush Long Spoon (Wooden or Stainless) 2-gallon bucket. 8" diameter funnel Starsan (sanitizer) Thermometer (Taylor Digital recommended for about $12 on Amazon) Milk Crate (Optional but helpful.) **And that's it*** Packaging (bottling or kegging) will be covered in another video. Unnecessary & Time Wasting Steps 1) Gravity readings. We are making extract beer from a kit. The gravity will be close to or equal to the stated gravity on the kit. Save your valuable time and energy for something else. 2) Taking constant temperature readings during the specialty grain seeping process to make sure the temperature doesn't go over 170f. Do this instead: Place about 3 gallons of water in the kettle, turn your kitchen stove on high, steep the grains for 25 minutes and take them out and discard the bag. The water temperature will be about 155 to 160 F at that point—well below 170 f. Use this time saving method. Don't stand over your stove with a thermometer! 3) Secondary fermentation. One of the best home brewers at our local brew club explained that this is a waste of time for the overwhelming number of ale & wheat kits. Most recipes tell the brewer to leave the wort/beer in the primary fermenter (6.5 gallon carboy or plastic bucket) for 2 to 3 weeks and then move it to a secondary fermenter for about another month. Unless you're making a big Belgian Ale (8% abv or higher) or a lager, this is a total waste of time. Do this instead: Leave the beer/ wort in the primary fermenter for 2 weeks minimum to about 3 weeks maximum. Then package. Your beer will be perfect. Don't waste your time with secondary fermentation!!!! Home brewing is fun!!!!! Don't do unnecessary work. Kettle Controversy. Aluminum vs. Stainless. Internet legend would have you believe that aluminum kettles are no good for home brewing. That's total nonsense. While I currently use a stainless kettle, only because I got a great deal on one—and my aluminum kettle wore out, aluminum kettles (including turkey fryers) work just fine for home brewing. I have made dozens of batches using an aluminum kettle and the beer was always superb. Some recommended kits from online brew stores: American Wheat kit from Northern Brewer. This is a simple kit and the beer is a huge hit with everyone. Just add 24 oz of clover honey at flame out (the end of the boil—not earlier or you'll kill the honey flavor). This will impart an awesome honey flavor and raise the abv to about 6%. This one is always "on" at my house. (Even non-beer drinkers enjoy it.) Northern Brown Ale from Austin Homebrew Supply. . (Get their 1% alcohol boost with the kit.) Awesome Green Zinger from Asheville Brewers Supply . Great hoppy beer with 5 hop additions! Uses both DME (dry malt extract) and LME (liquid malt extract). Fun to brew. Great to drink. Caribou Slobber from Northern Brewer. Just terrific. Gold Seal Cream Ale from Austin Homebrew Supply. (Get their 1% alcohol boost with the kit.) Delicious

As promised, here's me brewing an Espresso/Vanilla Stout! I'm also introducing a new technique: the step mash, which will hopefully contribute to a nicer body and head retention. Here's the recipe: 1 Kg Pale 2-Row 100 g Rolled Oats 80 g Roasted Barley 80 g Chocolate 80 g Crystal 135 L 50 g Molasses Step mash: - 45ºC 15 minutes "acid rest" - 55ºC 20 minutes "protein rest" - 66ºC 40 minutes "starch conversion" - 77ºC 5 minutes to add even more body Hop addition: - 8 g Columbus at 60 minutes Yeast: M36 Liberty Bell by Mangrove Jacks (I used the one I harvested from my Golden Ale but you can just use half a packet). Once fermentation is over, add 50 ml of espresso and 20 ml of vanilla extract before bottling. This is a common problem with wines that are bottled young. In this video you will learn how to prevent crystals in your wine and what they are. The tartrate crystals in wine are potassium bitartrate or cream of tartar. When an instable amount of tartaric acid is in the wine, the potassium bitartrate will fall out in crystal form. This can alter the pH and the taste of the wine. It is important to any unstable tartrates are precipitated before bottling the wine. To calculate alcohol, two key measurements must be taken. The Original Specific Gravity (OG), and the Final Gravity (FG). To take these readings, place the hydrometer in a vial of the liquid to be tested and read to the bottom of the meniscus. Correct for temperature if necessary and be sure to strain juice if it contains many solids. OG is taken before fermentation and FG is taken after fermentation has completed. How to Make Coca Cola Soda Fountain Machine with 3 Different Drinks at Home
All the steps for brewing a superb batch of beer and explained & demonstrated. Tips & time saving "tricks" are provided. These "tips & tricks" makes the video a valuable resource for both beginning and experienced home brewers. I have made over 100 batches of home brew. I've learned what equipment and steps are necessary, and (importantly) what are NOT necessary. I also debunk some myths and unneeded steps that make the brew day more difficult and do nothing for the quality of the beer. Equipment Needed: 5 gallon Kettle with lid (Stainless or Aluminum) 6.5 gallon carboy or a plastic fermentation bucket Airlock & Bung Extract Home Beer kit with yeast. (Some are recommended below, but any will do) "Jet Bottle Washer" Carboy brush Long Spoon (Wooden or Stainless) 2-gallon bucket. 8" diameter funnel Starsan (sanitizer) Thermometer (Taylor Digital recommended for about $12 on Amazon) Milk Crate (Optional but helpful.) **And that's it*** Packaging (bottling or kegging) will be covered in another video. Unnecessary & Time Wasting Steps 1) Gravity readings. We are making extract beer from a kit. The gravity will be close to or equal to the stated gravity on the kit. Save your valuable time and energy for something else. 2) Taking constant temperature readings during the specialty grain seeping process to make sure the temperature doesn't go over 170f. Do this instead: Place about 3 gallons of water in the kettle, turn your kitchen stove on high, steep the grains for 25 minutes and take them out and discard the bag. The water temperature will be about 155 to 160 F at that point—well below 170 f. Use this time saving method. Don't stand over your stove with a thermometer! 3) Secondary fermentation. One of the best home brewers at our local brew club explained that this is a waste of time for the overwhelming number of ale & wheat kits. Most recipes tell the brewer to leave the wort/beer in the primary fermenter (6.5 gallon carboy or plastic bucket) for 2 to 3 weeks and then move it to a secondary fermenter for about another month. Unless you're making a big Belgian Ale (8% abv or higher) or a lager, this is a total waste of time. Do this instead: Leave the beer/ wort in the primary fermenter for 2 weeks minimum to about 3 weeks maximum. Then package. Your beer will be perfect. Don't waste your time with secondary fermentation!!!! Home brewing is fun!!!!! Don't do unnecessary work. Kettle Controversy. Aluminum vs. Stainless. Internet legend would have you believe that aluminum kettles are no good for home brewing. That's total nonsense. While I currently use a stainless kettle, only because I got a great deal on one—and my aluminum kettle wore out, aluminum kettles (including turkey fryers) work just fine for home brewing. I have made dozens of batches using an aluminum kettle and the beer was always superb. Some recommended kits from online brew stores: American Wheat kit from Northern Brewer. This is a simple kit and the beer is a huge hit with everyone. Just add 24 oz of clover honey at flame out (the end of the boil—not earlier or you'll kill the honey flavor). This will impart an awesome honey flavor and raise the abv to about 6%. This one is always "on" at my house. (Even non-beer drinkers enjoy it.) Northern Brown Ale from Austin Homebrew Supply. . (Get their 1% alcohol boost with the kit.) Awesome Green Zinger from Asheville Brewers Supply . Great hoppy beer with 5 hop additions! Uses both DME (dry malt extract) and LME (liquid malt extract). Fun to brew. Great to drink. Caribou Slobber from Northern Brewer. Just terrific. Gold Seal Cream Ale from Austin Homebrew Supply. (Get their 1% alcohol boost with the kit.) Delicious

How to Brew Beer at Home: Start to Finish. Tips & Tricks. For the Beginner or Expert
All the steps for brewing a superb batch of beer and explained & demonstrated. Tips & time saving "tricks" are provided. These "tips & tricks" makes the video a valuable resource for both beginning and experienced home brewers. I have made over 100 batches of home brew. I've learned what equipment and steps are necessary, and (importantly) what are NOT necessary. I also debunk some myths and unneeded steps that make the brew day more difficult and do nothing for the quality of the beer. Equipment Needed: 5 gallon Kettle with lid (Stainless or Aluminum) 6.5 gallon carboy or a plastic fermentation bucket Airlock & Bung Extract Home Beer kit with yeast. (Some are recommended below, but any will do) "Jet Bottle Washer" Carboy brush Long Spoon (Wooden or Stainless) 2-gallon bucket. 8" diameter funnel Starsan (sanitizer) Thermometer (Taylor Digital recommended for about $12 on Amazon) Milk Crate (Optional but helpful.) **And that's it*** Packaging (bottling or kegging) will be covered in another video. Unnecessary & Time Wasting Steps 1) Gravity readings. We are making extract beer from a kit. The gravity will be close to or equal to the stated gravity on the kit. Save your valuable time and energy for something else. 2) Taking constant temperature readings during the specialty grain seeping process to make sure the temperature doesn't go over 170f. Do this instead: Place about 3 gallons of water in the kettle, turn your kitchen stove on high, steep the grains for 25 minutes and take them out and discard the bag. The water temperature will be about 155 to 160 F at that point—well below 170 f. Use this time saving method. Don't stand over your stove with a thermometer! 3) Secondary fermentation. One of the best home brewers at our local brew club explained that this is a waste of time for the overwhelming number of ale & wheat kits. Most recipes tell the brewer to leave the wort/beer in the primary fermenter (6.5 gallon carboy or plastic bucket) for 2 to 3 weeks and then move it to a secondary fermenter for about another month. Unless you're making a big Belgian Ale (8% abv or higher) or a lager, this is a total waste of time. Do this instead: Leave the beer/ wort in the primary fermenter for 2 weeks minimum to about 3 weeks maximum. Then package. Your beer will be perfect. Don't waste your time with secondary fermentation!!!! Home brewing is fun!!!!! Don't do unnecessary work. Kettle Controversy. Aluminum vs. Stainless. Internet legend would have you believe that aluminum kettles are no good for home brewing. That's total nonsense. While I currently use a stainless kettle, only because I got a great deal on one—and my aluminum kettle wore out, aluminum kettles (including turkey fryers) work just fine for home brewing. I have made dozens of batches using an aluminum kettle and the beer was always superb. Some recommended kits from online brew stores: American Wheat kit from Northern Brewer. This is a simple kit and the beer is a huge hit with everyone. Just add 24 oz of clover honey at flame out (the end of the boil—not earlier or you'll kill the honey flavor). This will impart an awesome honey flavor and raise the abv to about 6%. This one is always "on" at my house. (Even non-beer drinkers enjoy it.) Northern Brown Ale from Austin Homebrew Supply. . (Get their 1% alcohol boost with the kit.) Awesome Green Zinger from Asheville Brewers Supply . Great hoppy beer with 5 hop additions! Uses both DME (dry malt extract) and LME (liquid malt extract). Fun to brew. Great to drink. Caribou Slobber from Northern Brewer. Just terrific. Gold Seal Cream Ale from Austin Homebrew Supply. (Get their 1% alcohol boost with the kit.) Delicious

HBW: How to brew an Espresso/Vanilla Stout
As promised, here's me brewing an Espresso/Vanilla Stout! I'm also introducing a new technique: the step mash, which will hopefully contribute to a nicer body and head retention. Here's the recipe: 1 Kg Pale 2-Row 100 g Rolled Oats 80 g Roasted Barley 80 g Chocolate 80 g Crystal 135 L 50 g Molasses Step mash: - 45ºC 15 minutes "acid rest" - 55ºC 20 minutes "protein rest" - 66ºC 40 minutes "starch conversion" - 77ºC 5 minutes to add even more body Hop addition: - 8 g Columbus at 60 minutes Yeast: M36 Liberty Bell by Mangrove Jacks (I used the one I harvested from my Golden Ale but you can just use half a packet). Once fermentation is over, add 50 ml of espresso and 20 ml of vanilla extract before bottling.
